Q: What have you done to improve your sustainability since your last visit? A: We have continued to work on finding plant based, compostable packaging for all our products. Our locations have committed to paperless reporting. All our new team members are educated on waste disposal. We are also working with a new partner to offer reusable takeout containers on all our delivery platforms so we are not producing any packaging unnecessarily.
Q: If your packaging is plant based, can you eat it? A: Excellent question! We have never tried but we think it might be a bit chewy so we wouldn’t suggest it. Definitely stick to what’s in the packaging.
Q: How do you avoid wasting food? A: We use every part of an ingredient possible. For example, instead of throwing out the parts of cold cuts that don’t make great sandwiches, we use them to flavour soups. Our leftover bread is turned into dishes like Papa al Pomodoro. We also donate leftover food that is still safe to eat so we can help out our community. A big step we have taken is to create a new role within Gruppo Terroni specifically to manage food waste and constantly ensure nothing is unnecessarily made or disposed of.
Q: Have you always been friends to the Earth? A: Sustainability is very important to the Mammoliti Family. We are also lucky because sustainability is such an inherent part of Italian culture. Whether it’s Cucina Povera (poor cooking) which uses leftovers to make great tasting food or traditional farming methods, or even simple household waste disposal, there is a lot to be inspired by and to implement in our locations.
My parents moved from Calabria because there was nothing there. My mom family moved here when she was 12. My father was the first of his family that moved here.
