How long have you been with Gruppo Terroni?
Francesco (F): Since Sept. of 2011. Almost 13 years.
Selvano (S): I have been with Gruppo Terroni for 29 years.
What has been your favourite memory since then?
F: My best memory is working as a floor manager at Terroni Adelaide right after we opened the second and third floors. We were doing 800 to 1000 guests per night and we were just learning how to do that. So many f-ups, so many late nights but all wonderful memories.
S: My favourite memory of working at Terroni was making sausages with Cosimo’s dad, Vince Senior.
What is your favourite part of your job?
F: Doing a Saturday night shift and being there with the team. Although with kids at home that doesn't happen much anymore.
S: My favourite part of my job is working with others, building a team every single day and working hand in hand to keep each other and everything in order.
What is your favourite dish on the menu?
F: Garganelli Geppetto
S: My favourite dish on the menu is the Spaghetti Al Limone.
What is your favourite part of working together?
F: Chef Silvano is always there to help and support any decisions we make. He and I share the same vision in life and business and we're both so competitive when it comes to getting more guests through our doors.
S: The best part of working together is that we feel more like family than coworkers. We are there to support one another at all times.
Adelaide is our biggest location and you can have 1000+ covers in a single night. How do you handle that?
F: I don't, my team does and I'm so lucky to have an amazing one. I simply make sure that everyone knows what to do and is prepared for the worst. In the end, it's just pizza and pasta.
S: To be able to handle days with 1000+ covers, support is the largest contributor. I wouldn't be able to get through each day without the help of my co-workers.
Where is your favourite place to sit for dinner in the building?
F: I like table 30. It's a corner booth that oversees the whole dining room and the kitchen. You're in the action but kind of tucked into a corner where no one sees you're watching.
S: My favourite place to sit for dinner is the Atrium because of the outlook of the sky-light
